Who says you have to eat a hot dog on a hot dog bun? What if you don’t have any? What if all the hot dog buns are pandemic-style stale? Well, then try the burger buns. Are they stale too? Not today is okay with me. Then burger buns it is!
Serves 6

8.4 oz. pkg. MORNING STAR FARMS Veggie Dogs, thawed – contains 6 large links
6 whole wheat burger buns
Grey Poupon Dijon Mustard plain or mixed with a little veg mayo – as much as you want
sm. inner leaves of crisp romaine lettuce, broken in half
fine dice onion, celery and sweet red peppers – as much as you want for 6 sandwiches
fresh ground black pepper
1- Today I chose two ways to cook the V. dogs: boiled and pan-fried.
2- Bring saucepan of water to boil. Add 3 veggie dogs and cook till heated through – not too long otherwise they’ll get mushy. Remove to board. Cut each V. dog in half around the equator, then slice each segment in half from end to end.
3- Melt a little oil in a skillet over medium-low heat, swirl around. Add 3 veggie dogs, roll to coat, then turn as needed to cook all surfaces. Don’t overcook or they’ll become too crispy. Remove to board. Cut each V. dog in half around the equator, then slice each segment I half from end to end.
4- Spread poupon-mayo on all bun halves.
5- Place lettuce leaf on half the buns.
6- Place chopped veggies on the other half of buns.
7- Place 3 segments V. dogs on top of the chopped veggies.
8- Sprinkle the veggie dogs with fresh grind black pepper.
9- Close sandwiches and serve.
