Fresh Roasted Vegetables

Beets, turnips, parsnips and sweet onion, liquid smoke, some sweet with extra virgin olive oil, garlic and sea salt. Served with Better Than Hummus or Wholly Guacamole Original or Classic style. Better than wonderful!

Serves 8


Preheat oven to 400 degrees

Ingredients:

1 lb. fresh sweet onion, peeled and cutinto 3/4-1 inch squares

2 lbs. fresh beets, cut off ends, peel and cut into 3/4 inch cubes

2 lbs. fresh turnip, cut ends off, peel and cut into approx. 1-1/2 inch sticks

3 T. extra virgin olive oil

2 t. sea salt

1 t. garlic powder

1/3 c. light brown sugar

1-2 T. liquid smoke


1- Place veggies and seasonings in extra-large bowl. Using clean hands, toss to coat well.

2- Pour into 17×23 inch sheet cake pan. Even out.

3- Bake in preheated 400 degree oven, bottom rack, for 45 minutes-1 hour.

4- Remove from oven, cover tightly with foil and bake another 30 minutes or till veggies are fork-tender (slides easily off fork).

5- Before serving toss veggies on baking sheet to moisten with oil at the bottom of the pan.

Notes: Depending upon freshness of vegetables, they’ll take longer or shorter to cook.

Serve with Wholly Guacamole Classic Style – I buy the 2 oz. cups; they stay fresher that way. Or serve with Better than Hummus – recipe at end.
