

BEEF AND BEAN MACARONI
One of those simple comfort food dishes. Kicked up a bit just because we can! Beans A-F Beef Tomatoes Macaroni bring back memories of comfort!
Makes 8 cups beef and bean mix plus 8 servings macaroni
Macaroni:
16 oz. box elbow macaroni – cook according to pkg. instruction in lots of sufficiently salted boiling water plus 1 T. veg oil, drain in colander, rinse quickly under cold water, return to pot away from stove,
ADD:
2 T. extra virgin olive oil
2 t. garlic powder
1 t. dried basil
salt and pepper to taste
1 T. GO VEGGIE Shaker Parmesan
Toss to distribute evenly – set aside
- If the macaroni starts to stick before it softens in the pot while cooking, take a potato masher to it while it’s boiling – breaks it apart nicely (don’t wait too long though – you’re not trying to break the macaroni, only separate the elbows)
BEEF AND BEAN MIX:
2 c. TVP CRUMBLE – link from SOUS-CHEF
14.5 oz. can stewed tomatoes – Essential Everyday brand, cut slices into smaller pieces
14.5 oz. Hunt’s Diced Tomatoes
15.5 oz. can GOYA brand pink beans, including liquid
15.5 oz. GOYA brand black eye peas, including liquid
DR WT 4 oz. can mushroom stems and pieces
1 T. GO VEGGIE Shaker Parmesan
2 t. garlic powder
2 t. onion powder
2 t. dried basil
1/2 t. ground allspice
1 T. vegan yeast aka nutritional
fresh grind black pepper to taste
1- Prepare the macaroni.
2- In large saucepan, over medium heat, combine all BEEF AND BEAN MIX ingredients. Stir well, bring to slow boil, adjust heat as needed. Cook 30 minutes. Adjust for salt.
3- You can stop here if you don’t want the macaroni. The Beef and Beans makes 8 cups and tastes delicious on its own.
4- Or reheat macaroni in skillet with a little more oil, then serve the BEEF AND BEAN MIX OVER THE MACARONI on individual plates. Or mix them together before serving.
Notes: Re: TVP CRUMBLE: This crumble can be used as beef, pork or turkey replacement crumble. Textures just like ground animal meat.
