Post Pandemic Alert Boil The Tofu
Firstly, STOP FREEZING THE TOFU – This is for distributors, stores, food service establishments and home use.
Secondly, BOIL THE TOFU. My first instruction regarding the boil is that you shouldn’t have to boil the tofu.
But store staff evidently thinks animal-free means it can stay out at room temperature, or if short on staff or short on time to put product away when it comes in, they freeze it when they get around to it, thinking that freezing kills bacteria and viruses. It doesn’t.
Treat all fresh product like it needs refrigeration, immediately upon receiving it. And don’t freeze the tofu, especially when using it for deep-frying in restaurants. Freezing breaks down the cellular structure of what’s being frozen, rendering it soft.
