AFC TOASTED CHEESE SANDWICH

“That was a toasted cheese sandwich I just made you.”

  • I know.

It was not a grilled cheese sandwich. There’s a difference.

Did you see the extra virgin olive oil I put on one side?

  • I did. Nice.

So you think that was a grilled cheese sandwich?

  • Yes.

It wasn’t. I toasted the bread in the toaster, then heated the cheese and the bologna in the skillet. Did you know that?

  • No I didn’t. I thought it was a grilled cheese sandwich.

That I cooked in a skillet.

  • Yes.

That’s what makes me so good – that I can make a grilled cheese sandwich out of toast and nobody would know. Not even you.

  • You’re right. I loved it. Looks like a grilled club sandwich.

Steve tells Lilly, ‘Mama made a club sandwich’. He looked at me and said, ‘you sure know how to make a sandwich’. That’s what he and a lot of other people at Village Mart used to say, “you sure know how to make a sandwich”.

So here’s one of them:

1- 2 slices lightly toasted thick white bread or Texas toast. Spread/brush extra virgin olive oil on one side only of each toasted bread slice.

2- Place each toast olive oil side down on counter. Spread Animal-Free mayo on one toast topped with sliced tomato that was warmed only – not cooked till it loses it’s shape – in a skillet with a little oil and fresh grind black pepper.

3- In non-stick skillet heat 1 slice Follow Your Heart Smoked Gouda between 2 slices Tofurky bologna till cheese melts. Better to bring cheese to room temperature first and then cook on low heat – use cover if needed. Be careful not to overcook the bologna, otherwise it will get tough.

4- Spread prepared yellow mustard on second toast, then place bologna/cheese stack on top of mustard.

5- Close, cut in half, serve.
