HOME FRIES AND JUST EGG OMLET

Perfect for restaurant fare. Holds up well.

You heard of putting chopped scrambled egg in fried rice? Well, as I was going to do that I noticed some diced potatoes in the pantry, so went with them instead.

Decided to use only salt, pepper and rosemary for seasoning and liked it well enough to add to the JUST EGG Collection.

Not everybody likes a lot of seasoning. This one’s for Y’all!

Makes 6 cups


INGREDIENTS:

2 T. extra virgin olive oil

2 c. 1/2 inch dice yellow onion

1/2 t. salt


2, 15 oz. can diced potatoes – I used Stokely’s brand – drain and rinse well in strainer, then shake off excess water

1/2 t. salt

fresh fine grind black pepper to taste

11 oz. can Steam Crisp Super Sweet White corn, drain in strainer- GREEN GIANT brand

1/2 t. ground rosemary

8 oz. box JUST EGG folded plant egg – I call it JUST EGG Boxed OMLET – it’s more accurate – 4 pieces cut into 3/8 inch cubes (that’s the whole box)

  • If the French object to the usage of the word omelet, too bad, but they won’t, they like innovation. Just in case, I took the ‘e’ out if they’re offended – omlet. Okay?

1- In large cast iron skillet, over medium-low heat, melt olive oil.

2- Add onion and salt; toss to coat with oil, then cook till translucent.

  • We cook the onion slow to soften not char the onion to optimize the onion flavor.

3- Add drained potatoes, salt and pepper. Stir well to coat.

4- Raise heat to medium then medium high and sauté about 3 minutes, then evenly spread in skillet. Let cook without stirring to char some of the surfaces.

5- Flip the spuds to char the underside a bit.

6- Sprinkle with rosemary and stir to evenly distribute.

7- Add corn, stir and cook a few more minutes.

8- Add the JUST EGG, stir to moisten with the contents of the skillet.

9- Turn heat off and wait to reheat and serve.

10- I like to garnish with small green pimento olives – Manzanilla brand, and matchstick radish. Choose your own garnish or nothing at all.



Variation: Make a potato salad.

1- Chill the Home Fries And JUST EGG mix.

2- Place in mix bowl. Add small size chopped pimento stuffed olives, coarsely chopped. Use as many as you want

3- Add veg Mayo, ketchup and mustard to taste. Stir well.

4- Garnish with chopped fresh cilantro or parsley; or sprinkle with dried dill weed.


Notes: The more tender and sweet the corn, the better
