

Lily’s Vegan Duck ala Sharon
Does it taste and texture like animal duck? I never had animal duck, so dunno. Steve used to order Peking Duck whenever we went Chinese if it was on the menu. One thing I do know is it wasn’t gamey. Tender, delicious, seasoning appropriate for duck. Subtle, should please all tastes. Steve loved it! Buy it. I’m getting ready to re-order.
Serves 6




8.5 oz. bag UNCLE BEN’S Jasmine Ready Rice – prepare according to package instructions just before duck is done
1 pkg. 9.85 oz. VEGAN IMITATION SMOKED DUCK, by May Wah aka Lily’s Vegan Kitchen, thawed – cut vegan duck in strips – cut it across the center from end to end, then crosswise into 1/2 inch widths
2 T. extra virgin olive oil
1 lg. sweet onion – cut ends off, cut in half from end to end, then cut into thin half rings, 1/4 inch wide
1 super jumbo or 2 med. size fresh sweet red pepper, cored and cut int 1-1/2 x 1/4 inch strips
1 t. salt
fresh grind black pepper
1 t. garlic powder
1 t. smoked paprika
1 t. fine grind fennel seed
1 t. dry mustard
1/2 t. cinnamon
1 t. dried basil
1/3 c. orange juice
1 T. steak sauce
fresh thinly sliced lime – garnish
smoked paprika – garnish
1- In large skillet, over medium heat, melt olive oil.
2- Add onion, red peppers, salt and fresh grind black pepper. Toss to coat with oil, then saute until translucent.
3- Add Lily’s Duck strips, tossing to coat with moisture from the skillet.
4- Sprinkle the five spices and basil onto duck, toss to coat evenly. Cook a couple minutes to sear onto duck.
5- Add orange juice and steak sauce. Stirring to incorporate and evenly disperse.
6- When most of juice evaporates, salt and pepper to taste if needed.
7- Place cooked rice onto serving platter.
8- Top with duck/veg saute.
9- Cook lime slices briefly so they keep their shape, in juices of pan, then position lime slices evenly over top, then sprinkle lightly with smoked paprika.
10- Spoon whatever liquid remains in pan on top of the dish. Serve.
Notes: If you want to use regular long grain rice, go ahead. I used these microwaveable bags, since I had them on hand and Steve likes them.
