AFC ROASTED PEPPER JAM

An easy appetizer for restaurant or home.

ROASTED TOMATO JAM

Plain roasted cocktail tomatoes. Spread on toast or use as a base for toasted pizzas! Place on sliced French baguette as appetizer or English muffin for pizzas. Or as a topper garnish for main dishes, salads and as a replacement for fresh tomatoes on a sandwich!

Contains only tomatoes.

Makes as much as you want

4 pkgs. cocktail tomatoes – larger than cherry tomatoes – wash, cut core tips off each

Place on parchment paper on baking sheet.

Bake in preheated 375 degree oven 1 hour or done to your liking.

When cool enough to handle, pick each tomato off the paper and place in covered container,

Toast your favorite bread; spread with margarine or extra virgin olive oil. Place tomato on toast and smear it with a spoon. That’s your jam.

Sprinkle with fresh grind black pepper and a twist of pink salt.

If desired, top with shredded plant parmesan cheese (at room temperature) and chopped fresh basil or cilantro.

Notes: The larger cocktail tomatoes work better than the grape tomatoes for this jam, since they contain more pulp.
