SmokeHouse Almond Tofu Topper

Tofu cubes tossed with cracker meal made from Gluten-free SmokeHouse Almond Crackers by Blue Diamond, then baked till crispy! Top a salad, add to soups or chilies, use as the protein source in pita pouch sandwiches, tortilla wraps and tacos, in potato and/or macaroni salads or serve as a snack! Get creative. You decide!

Makes about 3 cups cubes

Preheat oven to 375 degrees

2, 14 oz. pkgs. extra firm water-packed tofu – rinse, wrap in triple layers cloth towel (use large towel, position and fold over tofu blocks for the best coverage and depth advantage – let set 1 hour with weight on top – when ready to use, cut into 1/2-3/4 inch cubes

1/2 c. BLUE DIAMOND SmokeHouse Almond Crackers – take one box, empty in food processor and process till evenly crumbly (the crumbs will look like fine breadcrumbs aka cracker meal) – measure out 1/2 c., then place remainder in tightly covered container and store at room temperature for other uses.

2 t. garlic powder

2 t. onion powder

1 t. salt


In large tossing bowl combine cracker meal, garlic and onion powders and salt. Toss to evenly distribute.

Place all tofu cubes at once into bowl. Shake bowl around, then use a little wrist action to pop up cubes and overturn them till evenly coated.

Place cooling racks over baking sheets. Place seasoned tofu cubes on racks not touching one another.

Bake in preheated 375 degree oven 20-25 minutes. Remove from oven and when cooled to room temperature place in container.

Notes: I brick-pressed the tofu for these toppers, because I was looking for a firmer end-product. If you want a more tender, in the middle, cube simply pat the tofu dry before cutting into cubes, tossing and baking.

When these first come out of the oven and as long as they stay at room temperature, they’ll stay crispy. When refrigerated, they lose their crispness. To re-crisp: pan-fry in a lightly oiled skillet on medium heat just before serving.

If you don’t have these particular gluten-free almond crackers at your location, substitute another type cracker, processing till fine.
