WHITE HOMINY MEAT

A high-end White Hominy Meat filling for soft and hard tacos, enchiladas, empanadas and tamales. Served with an equally sophisticated Tomato Cheese Corn Sauce!

Makes 3-1/2 cups

15.5 oz. can White Hominy – I used BUSH’S brand – drain and rinse well, transfer to bowl, cover with water, add 1 teaspoon baking soda and 2 Tablespoons red wine vinegar, marinate 1 hour, then drain and rinse well

VEGGIE SAUTE:

2 T. light sesame oil

1 c. diced celery

1 c. diced mild cubinelle peppers

1 c. diced sweet onion

1 t. salt

8 oz. fresh white button mushrooms, sliced

fresh grind black pepper to taste

7 oz. jar NAPOLEON GRILLED ARTICHOKES including liquid from jar

marinated and drained WHITE HOMINY

1 t. smoked paprika

1 t. dried powdered mint

1/2 t. ground caraway seed

1/2 t. cinnamon

2 T. jarred minced garlic

1/2 c. dry red wine – I used GLEN ELLEN

3 T. vegan yeast flakes – I used PREMIUM KATE NATURALS NUTRITIONAL YEAST FLAKES

salt and pepper to taste


In extra-large skillet, over medium heat, melt oil.

Add celery, peppers, onion and salt, stir, then saute, stirring occasionally till nearly soft.

Add mushrooms, additional salt and saute till tender.

Add remaining ingredients, stirring after each addition to even distribute.

Cook, uncovered, on medium-low heat, stirring occasionally, till well done and all liquid evaporates. 

Salt and pepper, then set aside.


Notes: I know that many people don’t like the taste of soft corn tortillas. Hominy is in that category of maize. So I went to some lengths to disguise it and succeeded, whereby the flavor in the hominy meat resembles the flavor of white tortilla chips, rather than the pungent flavor of corn flour.


TOMATO CHEESE CORN SAUCE

Cream corn and V-8 VEGETABLE JUICE lay the foundation for a multi-dimensional culinary experience! Smooth sensations all the way around! Who would think from two common ingredients such a surprise package could catapult itself into the world of animal-free cuisine! Anything is possible when you cook animal-free!!

Makes 3 cups


2 c. V-8 VEGETABLE JUICE

14.75 oz. can cream style corn – I used Del Monte brand

1 t. salt

2 T. light sesame oil

2 t. liquid smoke

1 t. Worcestershire sauce

1 T. jarred minced garlic

1 t. onion powder

1/4 t. celery seed

1/2 t. powered mint

1/2 t. cinnamon

1 t. cumin

1 t. smoked paprika

1/4 t. red cayenne pepper

1 T. vegan yeast aka nutritional yeast

3 single slices TOFUTTI American Cheese

1/4 c. GO VEGGIE SHAKER PARMESAN

salt and pepper to taste


In medium saucepan, over medium heat, combine all ingredients, stirring well after each addition. After adding the American cheese, stir till melted before adding the parmesan.

Bring to slow boil and cook, uncovered, approx. 30 minutes, stirring as needed.

Salt and pepper to taste and set aside.

  • Due to the thickened canned cream style corn you shouldn’t need an additional thickener if you cook the sauce long enough to allow for some evaporation.
