Fried Veg sausage crumbles, fresh spinach and fried pineapple on grilled Greek Pita flatbread spread with chipotle mayo and beer mustard! A ‘take it to the bank’ sandwich!

Makes 1 sandwich

14 oz. tube Gimme Lean Veggie Sausage by Lightlife – break off enough for 1 sandwich, about 1/4 of the tube

vegetable oil for frying

2 canned pineapple rings

big handful of fresh spinach

1, 7″ Greek Pita flatbread (pocketless)

Just Mayo – Chipotle flavored

beer mustard – I used Great Lakes Dortmunder Beer Mustard (spicy brown mustard would work)

Pinch veg sausage into oiled skillet, over medium heat. As it begins to brown and firm up, break into smaller pieces with the tip of a pancake turner. When done, remove from skillet.

In a separate oiled small skillet, over medium heat, fry 2 slices pineapple till browned on both sides.

Place the pita flatbread into the skillet sausage was cooked in and warm and slightly brown on both sides. Don’t crisp it, just warm and slightly brown it – about 30 seconds each side.

Spread mayo evenly on the pita flatbread, then top evenly with mustard.

Mound spinach on the flatbread. Top with the veg sausage crumbles. Lay pineapple slices onto top of the sausage. Squirt a little more mayo on top of the pineapple.

That’s it.

To eat, fold like you would a soft taco.

Notes: This simple sandwich doesn’t take long to make and it is so-o-o good!

This is the flatbread sandwich I want to get at a restaurant.
