FLOUR TORTILLAS, MAKING CHAR MARKS

When making burritos or soft tacos, which require softening the tortilla in order to more easily roll or fold it, you can soften it plus add some char marks that give it a slightly charred taste.

Here’s what you do: For an electric stove, turn your stove burner on till it starts to heat up. Place the tortilla directly, and centered, on the burner. When a little smoke rises from the edges (this will only take a few seconds) lift off tortilla and immediately assemble your burrito or soft taco.

For a gas stove, turn burner on low, and do the same thing. The char marks will be different, the effect the same – to soften and char.

Just be careful you don’t leave it on too long, since then it will crisp up/dry out, making rolling/folding more difficult than if you hadn’t tried to soften the tortilla at all. Practice with one to see how it’s done.

Simple and quick – quick being the key! I love this method for softening, plus the added flavor dimension it gives to burritos and tacos. You will too!
